Weekly Recipes

I love conference weekend because I get to hang out with my family and cook and relax. Here are a couple of new recipes I made this weekend. Hope you enjoy them as much as we did.

Mexican Chicken Soup
1 can corn - drained
1/2 cup uncooked rice
3 cans chicken broth
1/4 c diced onion
1 small diced tomato
1 1/2 teaspoon cummin
1 c cooked diced chicken
Bring all ingredients to a boil, then cover and simmer for 25 minutes until rice is done. Serve with avocado, tortilla chip strips & wedge of lime.




Peanut Butter Sandwich Cookies
8 tablespoons butter, softened
1 c creamy peanut butter
1/2 c firmly packed brown sugar
1/2 c granulated sugar
1 egg
1 teaspoon vanilla extract (thanks mom)
1 c flour
1 teaspoon baking soda
1/4 teaspoon salt
Preheat oven to 375. Lightly grease cookie sheet. Mix first 4 ingredients until creamy. Add egg & vanilla. Combine flour, baking soda & salt in separate bowl then add to peanut butter mixture. Put 1 inch ball of dough on greased cookie sheet, then press with a fork & sprinkle with sugar. Bake for 10-12 minutes until golden brown. Cool.
Filling:
6 oz cream cheese, softened
1/2 c creamy peanut butter
5 tablespoons powdered sugar
When cookies are cool, spread filling on one side, then press 2nd cookie ontop.

Did you have to put the picture of the cookies up? This is NOT going to help me get rid of this baby weight!
